Designed as a batch prepared mix that is packed with the flavours of the festive period, rendering it perfect for a festive gathering. Bikini Recipe
Serves 10 servings
To make the Clementine Syrup (makes 750ml)
300ml fresh clementine juice
200ml recently pressed lemon juice
500g fine sugar
Ingredients for the Drink (produces 850ml, serving 10)
400ml premium vodka
100ml London dry gin
150ml peach liqueur
200ml clementine cordial (as made above)
Fresh cranberries, as a garnish
Mandarin essential oil, for finishing
Instructions
For the Cordial: Combine the listed items into a saucepan, heat until it reaches a light boil, agitating to dissolve. Then, turn off the heat and leave to cool fully. Decant to a sealable bottle, cap it keeping it chilled, where it will keep for up to one month.
Preparing the Cocktail Base: Mix every liquid ingredients in a big jug, allow it to infuse for an hour, then pass it through best through muslin, to ensure it's completely strained.
When ready to serve: Pour 85ml of the batch mix to a cocktail shaker containing ice, gently stirring gently for one minute to cool it down. Strain into an frosted cocktail glass or a similar vessel, garnish with a few cranberries and finish using a brief mist of mandarin oil over the drink.
